Triple layer chocolate covered cheesecake, need I say more

Usually sometime around the holiday season I make my mom’s specialty, a triple layer chocolate covered cheescake. I know it sounds complicated and the recipe is lengthy, but if you have made a basic cheesecake, you can make this. All that is different is that it has a few additions to the basic cheesecake batter in each layer. I think of Julie and Julia when I see recipes like this, 🙂 go for it! What I love about cheesecake is it is much easier to make than flour cakes, you don’t have to worry about them rising or getting baking soda or powder correct. Most just have cream cheese, egg, sugar and vanilla.

Some tips: I use oreo’s (separated from the frosting) for the crust and sometimes need a bit more butter to get it to stick. I also don’t have a double boiler so I use a pyrex bowl over a small pot of boiling water. Every time I make this people are blown away by how yummy it is. But it is also very rich and filling so it might not be good after a large meal. I am making it for my work potluck this week and I can’t wait to eat it. Eating a slice of this is like an early present from Santa!
